Roasted Banana Bars






2 cups ripe banana, sliced (about 3 med)

1/3 cup brown sugar, packed


2 ¼ cups cake flour

1/4 cups granola

1/4 cup oats

¾ tsp baking soda

½ tsp baking powder


¼ cup buttermilk (lite)


1 tsp vanilla

1/4 cup peanut butter

1/4 cup almond butter

1 ¼ cups sugar

2 large eggs

chocolate chips


Method:


Preheat oven to 400

Combine banana, brown sugar baking dish

Bake at 400 for 35 minutes, stirring after 17 minutes, cool slightly

Reduce heat to 375

Combine flour, soda, and baking powder in bowl

Combine banana mixture, buttermilk and 1 tsp vanilla in another bowl

Place ½ cup butter and sugar in a bowl and beat until well blended

Add eggs, mix well

Add flour mixture to sugar mixture alternating with banana mixture

Pour batter into 13 x 9” pan coated with cooking spray

Cool

Yield

2 dozen bars

Peanut Butter Crunch bars







1/2c brown sugar

1/2c h
oney
1/4c greek yogurt

1/2 banana

1/4c crunchy peanut butter

1/4c almond butter


2 tbls milk

1 tsp vanilla

1 egg


1.5c flour

1 tbls vanilla powder

1/2 tsp baking soda

1/2 tsp salt


1c chocolate chips


Method:


Beat Sugar, honey, and the next 4 ingredients together for a while.
Add milk, egg and vanilla. Beat well.
Add flour, baking soda, salt and vanilla powder.
Add half the chocolate chips.


Spread into 9x9 pan and bake at 350F for 20 minutes.

Sprinkle rest of chocolate chips on top(i used an old cadbury chocolate bar i chopped with scissors) and yay enjoy!

Bepa Velvet Cupcakes


  • 2 1/2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 cup Yogurt (vanilla or plain)
  • 1 Tbls Cream Cheese
  • 3/4 cups sugar
  • 3 egg whites
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 2 tablespoons water
  • 1 1/2 teaspoons white vinegar
  • 1 teaspoon baking soda
  • 6 marshmallows, Quartered
  • chocolate chips
Instructions:

Preheat oven to 350°F.

In medium bowl, combine flour, cocoa, baking powder and salt.

In large bowl, cream Yogurt, cream cheese and sugar with electric mixer until light and fluffy.

Add eggs, vanilla extract

Alternately add flour mixture and buttermilk to yogurt mixture, add water and mix well.

Add Chocolate chips.

In small bowl, combine white vinegar and baking soda; gently stir into cupcake mixture.

Spoon cup holders half full. add 1/4 of a marshmallow in the middle. add more batter on top,

Bake 15-20 minutes or until toothpick inserted comes out clean.

Coconut Chocolate Chip Cupcakes

1c Sugar
1/2c yogurt
1 tsp coconut extract
2 eggs

1 1/2 cups flour
1 tbsp BP
1/2c coconut
1/4 tsp salt
1c sour cream/ buttermilk
1/3c milk
Chocolate Chips

Icing:
1c icing sugar
1 Tbls butter
1 1/2 Tbls 2% milk
1/2 tsp coconut extract
2/3c coconut

Beat sugar, butter and extract.
Add eggs 1 at a time.
Stir in flour, BP, salt and coconut
Add sour cream and milk and chocolate chips and stir until combined.

350F for 15 minutes.

Icing:

Cook over med sugar, butter and milk until easy to spread but not runny.

Red Peppers are on Sale Supper

1 Onion (sweet)
2-3 Red peppers
6 cloves garlic
1/2 can Diced Tomatos
15-20 Mushrooms
Tempeh
1-2 Chicken breats
Raisens
1-2 Thinkly Sliced Carrots

To Do:

Spray pan and sprinkle with salt. heat on medium. Throw in Stir-fry sliced onions and garlic. fry about 3 or 4 minuates with lid. Add thinly stir fry sliced red peppers. put lid on and fry until soft and caramelized.

add seasoned meat:
slice meat stir fry style

add:

seasoning salt
pepper
mequite
garlic mix
tumeric
thyme (small)
bbq sauce

stir and cook for a few minutes
add tomatos and juice and mushrooms.
put lid on and cook for about 5-10 mins
add raisens stir and cooked as long as water is gone.
